wouldn't the opening lines be something like: O child, I long for you seeing one undefiled?

No, here βλέπων goes with παῖ in the vocative, and παρθένιον has adverbial force. More literally it would be "O child looking girlishly [or perhaps 'looking like a girl,'] I long for you..." The παῖ here refers to a male youth as attested by commentators and translators, hence "boy."
